Doctor Kendra’s Recipe: Curry and Rice with Halloumi Cheese
When she’s not recruiting for government top secret projects or treating the operators that work within them, Doctor Kendra enjoys cooking while sipping on a glass of red wine. Most of the time she eats on her own and after a long day, often keeps the recipes simple. One of her favorite simple dishes includes curry and rice with halloumi cheese.
Curry & Rice with Halloumi Cheese
Makes five servings. She takes them to work as a leftover.
- 1 zucchini sliced
- 1 red or yellow pepper sliced
- 1 container of grape tomatoes sliced
- 1 jar of Patak’s Curry Sauce
- 1 package of Halloumi Cheese
- 1 cup of basmati rice
- Salt and pepper to taste
Instructions
- Cook basmati rice in a pot with 1.5 cups of water.
- While the rice is cooking, slice the halloumi cheese into small squares and fry in a frying pan, browning on both sides.
- Set halloumi aside in a separate dish and use the same frying pan to cook the zucchini, peppers and grape tomatoes.
- When the vegetables are cooked to desired texture, add half the container of curry sauce to the frying pan with the vegetables and stir on low heat.
- Add the cooked rice to the frying pan with the vegetables. Depending on sauce thickness preference, add more sauce if desired.
- Add the halloumi cheese to the mixture and serve.
